Eat more vegetables | |

Vegetables add color, crunch, great taste and important health benefits each time they are eaten. Not only are vegetables a great side, but also can be the main entrée or a refreshing snack. Make dips out of vegetables: artichokes and asparagus (guacamole). Keep vegetables cleaned and pre-cut for quick snacking: celery, broccoli, cauliflower and sweet bell peppers. Pop a baked potato into the microwave and add salsa and cheese. Select or make deli vegetable sandwiches and wraps (portabellas, summer squash, bell peppers, etc.) Make a vegetable bisque and serve hot or cold (i.e. squash, carrots, gaspacho, or add favorite vegetables to broth for a quick vegetable soup.
