Tomatoes are full of:
LYCOPENE:  this powerful antioxidant neutralizes harmful "free radicals" that may contribute to the development of cancer and heart disease.  Studies have show that eating lycopene-rich tomatoes may reduce the risk of prostate cancer and heart attack, and possibly protect against colon, rectal, breast and lung cancers.
VITAMIN A:  tomatoes contain beta-carotene, which the body converts to vitamin A (essential for vision, normal growth, reproduction and a healthy immune system).
VITAMIN C:  key to keeping gums healthy and healing wounds.
POTASSIUM:  linked to a lower incidence of stroke in men.
FIBER:  aids in digestion and may lower the risk of heart disease.

FRESH TOMATO SALSA

2 large ripe tomatoes, seeded and diced
½ small red onion, finely chopped
1 small jalapeño pepper, minced
1 tablespoon finely chopped fresh cilantro leaves
1 small garlic clove, minced
1 tablespoon lime juice
1 teaspoon olive or salad oil
¾ teaspoon salt
½ teaspoon ground cumin
¼ teaspoon black pepper
BAKED TORTILLA CHIPS

In medium bowl, combine tomatoes, red onion, jalapeño pepper, cilantro, garlic, lime juice, olive or salad oil, salt, cumin, and pepper. Serve with baked tortilla chips. Makes about 1½ cups.
Each ¼ cup serving: About 25 calories, 1 g fat, 9 mg cholesterol, 365 mg sodium.

PIZZA PROTECTION


Eating pizzas may not be as unhealthy as you think—at least not for men, anyway. Researchers at Harvard Medical School found that men who eat pizza are less likely to get prostate cancer. The secret is an ingredient in pizza called lycopene, a carotenoid responsible for giving tomatoes their bright red color. Tomato sauce and fresh tomatoes are even richer lycopene sources.
